Crude protein total
When determining crude protein content at the laboratory, the amount of nitrogen (N) is first to be determined. The amount of nitrogen is converted back into the amount of protein (RE = 6.25 x N). The crude protein total gives this total amount of N, converted to protein, including ammonia. During the preservation process, fermentation processes can create ammonia (NH3). This NH3 is also part of the fraction crude protein total. The crude protein total corrected for the ammonia content is the crude protein content.
